Fazzoletti, duck ragu, duck fat pangrattato

Pasta is cooked to order and tossed in a duck ragu made from duck legs and duck offal. Topped with breadcrumbs that are fried in duck fat.
Duck ragu – Duck legs are seared in butter along with duck hearts & gizzards. The offal is minced with onion, carrot, celery, sage and garlic then cooked altogether with red wine and chicken stock. The legs once tender are shredded and mixed with the sauce. 

House made breadcrumbs from leftover focaccia are fried in duck fat with garlic and rosemary.
