whole-roasted fish

all fish is caught from day boats from cornwall by our supplier finn & flounder.

the fish is seasoned, dressed with olive oil and lemon juice, it is whole roasted for around 15 minutes & served on the bone.

we do a lot of fish varieties:

john dory [pictured] - a delicious fish which has firm textured white flesh with moist, fine flakes and a mild, sweet flavour with a low fat content.

brill - if the turbot is considered the king of the sea, the brill can be considered the queen. flatfish, medium flavour, slightly sweeter than the turbot.

plaice - flatfish with a distinctive umami-like taste. great value flat fish, with a subtle flavour.

mackerel - round, oily fish, have high amounts of omega-3s. it has a rich, distinct flavor. Their flesh is moist, flaky, and soft.

red gurnard - round fish that has firm white flesh with a sort of earthy sweetness to it [red in colour as eats a lot of shrimps].

lemon & dover sole - Dover sole is perhaps the priciest and most well-regarded of soles, with its firm flesh and beautiful flavour. Lemon sole, on the other hand, has much more delicate flesh.
