pig head fritti

Whole pigs heads are braised in a liquor until very soft. the Meat is pulled apart and set in a gastro tray. Then it gets cut into finger shapes and crumbed.

for service, The Crumbed “finger” of pigs head is fried until crispy. we put on top some Pickled celery stalks mixed with fresh celery heart leaves and dressed in olive oil.

This is served with a ramekin of pilacca sauce, which is a fermented chilli sauce - Red chillis are grilled and blended with onion, garlic and salt then left to ferment for 1 month. Then the mix is re-blended with sugar and vinegar.
