strozzapreti brown crab cacio & pepe

home-made pasta tossed in a brown crab, black pepper and parmesan sauce. this is not a traditional sauce, rather a take on the classic cacio e pepe.

the sauce is made by toasting cracked black pepper then mixing it with blended brown crab meat (crab meat found inside the head), parmesan cheese, butter and pasta water. salt and lemon juice complete the seasonings.
