Stuffed pig trotter with pork sausage mix. Sausage ingredients - Pork meat, fat, and skin, fennel seeds, chilli flakes, cayenne pepper, garlic, black pepper.

We remove the bone from the sleeve. The sleeve is slow cooked then cooled down and stuffed. Wrapped in caul fat (crépine) then steamed, cooled down again then sliced.

To order, it’s seared to add a bit of crispiness on the outside and served with mustard fruit. Mustard fruit are a condiment made from poaching fruits in mustard flavoured syrup.
