SHRUB & the todoli citrus foundation
winter deserves more kudos. not just because it offers a moment to reset, but because of the produce the season offers us. bitter leaves, vibrant brassicas, earthy kale and – the season’s star - citrus.
We get our citrus from two of London’s most inspiring suppliers: natoora, and SHRUB. Our head chef, Jake, and sous chef, Mario, visited SHRUB’s citrus supplier in valencia in january 2025.
A juicy legacy.
the todoli citrus Foundation is the passion project of Vincent Todoli. After an impressive career in the arts and culture sector, during which he headed up some of the world's most important cultural institutions such as IVAM in Valencia and the Tate Modern in London, Todoli returned to his homeland to create the foundation, officially formed in 2014. He hoped to offer a legacy that would protect the region’s long history in citrus cultivation, which is increasingly under threat from rapid urbanisation. Today, his foundation is host to over 500 varieties of citrus: the largest in-soil collection in the world.
Beyond cultivation and protection, the foundation has a dedicated laboratory for the investigation, research and promotion of citrus in the culinary, cosmetic, pharmaceutical and perfumery industries. It is a commitment and passion that is inspiring in its detail and scale – and incredible to see some of their fruit find their way across the globe and onto our dishes.
